The hardest thing about making an edible coffee product is not the engineering. It's the flavour chemistry. Coffee's aromatic compounds — the ones responsible for origin character, roast notes, acidity — are volatile. They want to escape. Heat, water, oxidation, and time all destroy them progressively.
This is why freshly roasted whole beans taste better than pre-ground, and why a coffee that's been sitting on a hot plate for twenty minutes tastes like nothing. The compounds responsible for the good stuff are fragile. A manufacturing process that uses water or sustained heat would destroy exactly what we're trying to preserve.
Why cocoa butter?
Cocoa butter is a food-grade fat with three properties that make it ideal as a coffee carrier. First, it's nearly flavourless and odourless when processed correctly — it doesn't compete with the coffee. Second, it has a sharp melt point just below body temperature, which means it stays solid at room temperature but dissolves on contact with the palate, releasing the coffee's volatile compounds in a controlled, perceptible way. Third, it's an excellent lipid solvent, which means it dissolves and suspends the oil-soluble flavour compounds in coffee more effectively than water.
Water, by contrast, dissolves different compounds — it's good at extracting some chlorogenic acids and caffeine but poor at capturing the aromatic esters and aldehydes that give specialty coffee its character. The lipid route captures what the aqueous route misses.
The production process
- 1.Bean specification. You define the origin, variety, and roast profile. We don't source or roast the coffee — that's your expertise. Your beans arrive at our facility at your specified roast level.
- 2.Milling. The roasted beans are milled to a fine particle size optimised for our formulation. This is calibrated per roast level — darker roasts require a different grind distribution to lighter roasts to achieve the same flavour release on the palate.
- 3.Blending. The milled coffee is combined with molten cocoa butter and sugar at controlled temperature. No sustained heat — this step is brief and precise. The goal is even dispersion without driving off the aromatics.
- 4.Tempering. The mixture is tempered — a controlled cooling process that aligns the fat crystal structure of the cocoa butter. This produces the clean melt and the firm, snap-when-bitten texture of the finished bite.
- 5.Moulding and sealing. The tempered mixture is moulded into 20g units, cooled, and individually flow-wrapped. Each unit is sealed immediately after forming to minimise oxidative exposure.
What gets preserved — and what doesn't
The bean-to-bite process preserves roast character exceptionally well. The distinction between a light roast Ethiopian and a dark-roasted Colombian is immediately perceptible in the finished bite. Origin characteristics — particularly fruit-driven and floral notes from natural and honey-processed coffees — come through clearly.
What the format doesn't replicate is the brewed coffee experience in full — the liquid volume, the warmth, the aroma as you bring a cup to your lips. The Joe is not trying to replace a well-made filter or a well-pulled espresso. It's a different delivery format for the same raw material: a way to carry the coffee with you when the cup isn't an option.
